I had this one time in a restuarant with the flower pot bread, that's baked in in a terra cotta flower pot. This jelly is delicious. It's fairy clear and has shavings of the peppers through it, almost like orange marmalade.
Does anyone have the recipe for Sweet Bell Pepper jelly?
SWEET BELL PEPPER RECIPE
Ingredents:
1 1/4 lbs yellow bell peppers
1 1/4 lbs red bell peppers
2 tsp chili powder
pinch cayenne
2 cups vinegar
2 cups lemon juice (from 6 lemons)
2 lemons, grated rind of
2 tsp salt
5 cups sugar
6 oz fruit pectin (1 bottle Certo)
-seed %26amp; chop peppers
-mix peppers, vinegar, juice, and rind on stove
-add salt, cayenne, and chili powder
-stir in sugar and boil 5 minutes
-add pectin and boil 1 minute
-skim if necessary
-purée in blender

12 red bell peppers, seeded, white parts removed
1 tablespoon [15 mL] pickling salt
3 cups [600 g] sugar
1 cup [250 mL] wine or cider vinegar
Hot sterilized jars
Chop bell peppers.
Mix in pickling salt; leave to rest for 4 hours.
Transfer chopped peppers into a sieve; rinse peppers under cold running water to get rid of the salt.
Then transfer chopped peppers into a casserole, along with sugar and wine or cider vinegar.
Boil for 30 minutes, until of jelly consistency, 220°F [105°C] onto a candy thermometer.
Pour into hot sterilized jars; seal.
